Ingredients for 4 people:

200g of chanterelles, 250g of bomb rice, 1l of vegetable broth, 1 onion, 80g of grated parmesan, 1 garlic, 1 lemon, aromatic herbs, Spelunca extra virgin olive oil, pepper and salt.

  1. Boil the rice in the vegetable broth until tender.
  2. In a frying pan with Spelunca extra virgin olive oil, sauté the finely chopped onion, add the cleaned and chopped chanterelles, the crushed garlic, a pinch of pepper and salt.
  3. Add the rice to the pan, add a teaspoon of crushed aromatic herbs and the lemon juice. Stir and leave on low heat for a few minutes.
  4. Finally, spread the grated Parmesan cheese on top, mix well, adjust the salt and serve.
