CHICKEN STUFFED WITH MUSHROOMS

Ingredients for 4 people:

1 chicken breast of about 500g, 100g of assorted mushrooms, 2 hard-boiled eggs, 2 chicken livers, 100g of Serrano ham, 2 glasses of brandy, 1 slice of bread, ½ glass of milk, 1 onion, Spelunca extra virgin olive oil, pepper, bay leaf and salt.

  1. Fry the livers in a frying pan with a little Spelunca extra virgin olive oil, fry lightly and leave to cool. Cook the eggs until hard-boiled.
  2. In a blender, mix the livers with the slice of bread soaked in milk, a little pepper and a little brandy.
  3. Stuff the breast with the mashed paste and add the chopped hard-boiled eggs. Tie with kitchen string.
  4. Put the stuffed chicken, the grated onion, the mushrooms, the ham, the rest of the brandy, a few bay leaves and salt in a casserole with a good splash of oil. Cook over a low heat, stirring and adding water from time to time for about 45 minutes and serve.
