Ingredients for 4 people:
4 round courgettes, 4 eggs, 1 red pepper, 1 green pepper, 1 ripe tomato, 1 aubergine, ½ onion, paprika, aromatic herbs, extra virgin olive oil and salt.
- Cut the tops off the courgettes and scoop out the flesh.
- In a frying pan with extra virgin olive oil, sauté the finely chopped onion, add the cleaned and chopped peppers, the aubergine and the chopped pulp from the inside of the courgettes.
- Add the grated tomato, a pinch of paprika and season to taste. Leave on a low heat for about 5 minutes.
- Stuff the courgettes with the ratatouille and crack an egg on top. Season and sprinkle with some aromatic herbs. Wrap in aluminium foil and bake for 15-20 minutes in a medium oven. Serve the courgettes with the rest of the ratatouille.
