GASPATXO DE MELÓ I ALVOCAT

MELON AND AVOCADO GAZPACHO

Ingredients for 4 people:

4 slices of melon, 1 avocado, 1 spring onion, 100g of redcurrants, Spelunca extra virgin olive oil, sherry vinegar and salt.

Remove the peel and seeds from the melon and place in a bowl. Peel the avocado and add its flesh to the bowl.

Peel and chop the spring onion, add to the bowl along with a little salt, a good splash of Spelunca extra virgin olive oil and a splash of sherry vinegar.

2. Mash well and leave in the fridge for an hour.

3.      Divide between four bowls or plates and sprinkle the currants on top.
