Ingredients for 4 people:
1 medium monkfish, 12 prawns, 4 pickled cucumbers, 1 onion, 1 lime or lemon, 1 yellow pepper, vinegar, extra virgin olive oil Spelunca, chervil, pink pepper and salt.
- Remove the head and shells from the prawns, remove the central black thread and cut the meat into slices.
- Clean the monkfish, remove the skin and central spine and cut into thin slices.
- Finely chop the spring onion, yellow pepper and cucumbers. Squeeze the lime and strain the juice.
4. Divide the spring onion into four plates, place over the monkfish and prawns and sprinkle over the cucumber, red pepper, often chopped chervil and a few pink peppercorns. Season, sprinkle with lime juice, a few drops of vinegar and a drizzle of oil. Let marinate for half an hour and serve.
