OMELETTE CAKE

Ingredients for 4-6 persons:

9 eggs, 3 potatoes, 1 onion, 150 g spinach, 1 red pepper, 1 green pepper, 1 yellow pepper, 50 g cheese spread, fried tomato, extra virgin olive oil and salt.

  1. Prepare three different omelettes using three eggs each: one with 2 potatoes and the onion, one with the three coloured peppers and one with spinach and the remaining potato.
  2. Once the omelettes are warm, place them on top of each other and spread cheese between each layer.
  3. Top with tomato sauce and serve. They can be served either hot or cold.
