Ingredients for 4-6 persons:
9 eggs, 3 potatoes, 1 onion, 150 g spinach, 1 red pepper, 1 green pepper, 1 yellow pepper, 50 g cheese spread, fried tomato, extra virgin olive oil and salt.
- Prepare three different omelettes using three eggs each: one with 2 potatoes and the onion, one with the three coloured peppers and one with spinach and the remaining potato.
- Once the omelettes are warm, place them on top of each other and spread cheese between each layer.
- Top with tomato sauce and serve. They can be served either hot or cold.
