WHOLE SPINACH PANADONS

WHOLE SPINACH PANADONS

Ingredients for 4 people:

1 k fresh spinach, 100 g raisins, 50 g pine nuts, 400 g whole wheat flour, 1 egg, 100 cc Spelunca extra virgin olive oil, 20 g baker’s yeast, salt, pepper.

1. Clean the spinach, remove the stems and sauté them in a large frying pan with a little oil, then let them drain in a colander.

2. Prepare a dough with the flour, the yeast dissolved in a little water, salt, the Spelunca oil and the egg.

3. Once the mixture is very homogeneous, make fist-sized balls, cover them with a cloth and let them ferment for a while.

4. Mix the raisins, pine nuts, a pinch of pepper and salt with the spinach.

5. With a rolling pin, stretch the pasta, prepare circles and put a little of the spinach mixture in the center.

6. Close the panadons in a half-moon shape, fold the edges and put them in the oven for half an hour.
