PIZZA WITH ASPARAGUS AND GOAT’S CHEESE

Ingredients for 4 persons:

160 g of strong flour, 1 red pepper, 1 yellow pepper, 50 g of spinach, 1 onion, 4 green asparagus, 20 g of corn, 20 g of grated cheese, 4 slices of goat’s cheese, 10 g of baker’s yeast, tomato sauce, extra virgin olive oil, honey, oregano and salt.

Prepare the dough by mixing the flour with the yeast dissolved in a cup of warm water. Add a dash of extra virgin olive oil, salt and enough water to make an elastic dough.
2. Leave to rest at room temperature for 30-40 minutes, knead again and stretch the dough well.
3. Roast the peppers, peel and cut into pieces. Blanch the asparagus and spinach and drain.
4. Spread some tomato sauce, a few pieces of onion, peppers, spinach and asparagus on top of the dough. Add the cheese slices, corn, a few leaves of oregano and grated cheese. Season, drizzle with a little oil and bake in the oven at 200º for about 20 minutes. Serve with a drizzle of honey on top of the goat’s cheese.
