SPELK COAK AND LEEKS

Ingredients for 4 people:

500g wholemeal spelled flour, 2-3 leeks, 10g fresh baking yeast, 10g brown sugar, extra virgin olive oil Spelunca, pepper and salt.

  1. Mix in a bowl 100g of spelled flour with yeast, brown sugar and half a glass of warm water. Let stand for an hour in a warm place.
  2. Add the rest of the flour, a glass of water, a drizzle of virgin olive oil and a pinch of salt to the dough. Knead and let stand for about 30 minutes to ferment.
  3. Roll out the dough with the work on a floured surface and form the cakes. Clean the leeks, discard the green parts and cut into slices.
  4. Spread the leeks over the dough, salt, pepper, drizzle with a little olive oil and bake at 200º for about 30 minutes on a tray with parchment paper. Serve the cakes warm.
