Ingredients for 4 people:
125cc of Spelunca extra virgin olive oil, 125g of sugar, 200g of flour, 4 eggs, 1 glass of rum, 1 envelope of yeast, 50g of raisins, 100g of candied fruits, 1 lemon, ground cinnamon, powdered ginger and cloves ground.
- Soak the raisins and the candied fruit cut into pieces with the rum.
- Work the Spelunca extra virgin olive oil with the sugar until it forms a dough. Add the eggs one by one, the flour and the yeast, mix well and let it rest for a few minutes.
- Grate the lemon peel and add it to the dough.
- Grease an elongated mold with a few drops of oil and line it with baking paper.
- Add the fruits, spices to your taste and the lemon zest to the dough.
- Fill the mold and cook in a medium oven until it is golden brown and when you poke it with a toothpick it comes out dry from the inside. Let it cool well before unmolding it.
