SPONGE CAKE WITH APPLE AND WALNUTS

Ingredients for about 8 portions:

3 eggs, 150g of sugar, 200g of wheat flour, 2 golden apples, 100g of walnuts, ½ glass of milk, ½ glass of extra virgin olive oil, 1 sachet of baking powder and cinnamon powder.

1. Separate the egg whites from the eggs and beat them until stiff.
2. In a bowl, mix the flour with the sugar, egg yolks, milk, extra virgin olive oil and baking powder.
3. Add the egg whites to the mixture and stir. If it is too thick you can add a little water.
4. Grease a baking tin with oil and pour the batter into it. Sprinkle the diced apples and walnuts on top. Sprinkle with cinnamon and sugar and bake in a medium oven for 45 minutes.
