SUGARED ALMONDS

Ingredients for 4-6 people:
2 cups raw almonds with skin, 1 cup sugar, 1/3 cup water.
1. Put a pan on the heat with the almonds, sugar and water, all cold and all at the same time.
2. Stir until the syrup becomes frothy and the almonds begin to sizzle.
3. Keep stirring until they are well done and spread them out on a kitchen marble or metal tray. Spread them out with a spoon so they don’t stick together and leave to cool. If you have leftovers, store them in a metal tin, so they will stay crispy for weeks.
