Ingredients for 4 people:
4 slices of village bread, 6 eggs, 150g of seasonal mushrooms, garlic, parsley, extra virgin olive oil and salt.
1. Toast the bread on both sides.
2. Sauté the chopped mushrooms in a frying pan with a little oil, add salt, crushed garlic and parsley.
3. Add the eggs and keep stirring them until they start to set, then remove from the heat.
4. When lukewarm, spread over the bread and serve.
