TOMATOES STUFFED WITH GOAT CHEESE

Ingredients for 4 people:

4 tomatoes to fill, ½ goat cheese roll, 1 avocado, 100g sweet ham, 100g corn, 1 lemon, 4 cucumbers, 4 black olives, 10g capers, basil, extra virgin olive oil Spelunca and sal.

  1. Cut the top of the tomatoes and with the help of an empty spoon the pulp inside. Crush the basil.
  2. Season the inside of the tomatoes, add a few drops of oil and set aside. Peel and chop the avocado and sprinkle with a little lemon juice to prevent it from oxidizing.
  3. Cut 4 slices of goat cheese and cut the rest into cubes. Also cut the sweet ham into cubes. Chop the cucumbers and drain the corn and capers.

4. Fill the tomatoes with a mixture of corn, cheese, ham, cucumbers, avocado and capers. Add a little basil, oil and lemon juice and garnish with the reserved cheese slices and olives.
