WATERMELON GAZPACHO

Ingredients for 4 people:

1/2 medium watermelon, 1 red pepper, 2 ripe tomatoes, 1 garlic, chives, Spelunca extra virgin olive oil, sherry vinegar and salt.

Empty the inside of the half watermelon, remove the seeds and put the pulp in the blender or in a bowl. Reserve the empty rind in the refrigerator.

  1. Blanch the tomatoes and red pepper and peel them. Add to the bowl with the watermelon. Add the peeled garlic and a few chives, reserving a few for garnish.
  2. Dress with a splash of Spelunca oil, a few drops of vinegar and salt to taste.
  3. Whip well until smooth, strain and fill the reserved watermelon rind. Divide among four glasses or cups and garnish with the chives. Serve chilled.
