Ingredients for 4 people:
½ watermelon, ½ iceberg lettuce, 50g goat cheese, 1 apple, 12 black olives, extra virgin olive oil Spelunca, balsamic vinegar, basil, pepper and salt.
Cut the watermelon with a sharp knife and empty a good part of its pulp.
Select the pieces of watermelon that have no seeds and with a trowel make balls. Cut the lettuce into strips, peel the apple and chop it.
In a salad bowl place the chopped lettuce, add the apple pieces, watermelon balls and diced cheese. Season with salt and pepper and drizzle with a drizzle of oil and a few drops of balsamic vinegar and mix well.
Fill the watermelon with the contents of the salad bowl, add the black olives and a few basil leaves and serve.
