Ingredients for 4 people:
8 eggs, 1 handful of wheat asparagus, 100g of Iberian ham shavings, extra virgin olive oil Spelunca and salt.
- Scald the asparagus for just one minute after removing its fibrous parts. Drain.
- In a frying pan with oil, put the ham shavings to brown and set aside.
- In the same oil, add two beaten eggs with a pinch of salt per person. Let the tortilla set on one side, turn it over and place on some asparagus and a little ham. Fold the tortilla and serve hot.
