Wheat trout with Iberian

Ingredients for 4 people:

8 eggs, 1 handful of wheat asparagus, 100g of Iberian ham shavings, extra virgin olive oil Spelunca and salt.

  1. Scald the asparagus for just one minute after removing its fibrous parts. Drain.
  2. In a frying pan with oil, put the ham shavings to brown and set aside.
  3. In the same oil, add two beaten eggs with a pinch of salt per person. Let the tortilla set on one side, turn it over and place on some asparagus and a little ham. Fold the tortilla and serve hot.
